In this exclusive in-person lecture, renowned food scientist and author Dr. Paul Kindstedt (author of Cheese and Culture) explores the 11,000-year history of cheesemaking, from its Neolithic origins in the Near East to its arrival in the Americas. Dr. Kindstedt will lead a deep dive into how climate, migration, and the Eurasian Steppe shaped the dairy technologies we know today. Local cheese tasting to follow.
