A Southwestern “healthy heart” cookbook
An important part of any school nutrition program is getting the students involved and interested, so thath they see the relevance of the curriculum to their own lives. In order to involve both students and their families in making changes in their eating habits, the authors developed a cookbook that emphasized the use of heart-healthy Southwestern foods. This cookbook was developed by adapting some recipes brought in by students and teachers at Laguna Elementary School and Torreon Elementary School, as well as recipes contributed by the project's staff and ones we found in several cookbooks and on bean packages.
